Prep of potatoes in advance:
- Boiled and peeled the potatoes the day before (early afternoon), put in water in the fridge.
- Next day took out of fridge around 3-4h before cooking, removed water and just let sit in the casserole without lid on
- Took butter out of fridge 3h before to get soft
